Keto Gingerbread Cake

 

4 large eggs

1⁄4 cup almond milk 

2 tablespoon coconut oil / unsalted butter, melted 

½ cup of erythritol / xylitol 

1 tbs ground cinnamon

1 tbs cocoa powder unsweetened

1 tbs fresh minced ginger root   

1 tsp ground ginger 

¼ tsp clove powder 

1⁄2 tsp sea salt 

1 1⁄2 cups blanched ground almonds 

1 tsp baking soda

Pre-heat oven to 175 degrees. Whisk wet ingredients together, then add the dry ingredients. Mix until combined well. Grease an 8 x 8 inch pan or Bundt tin, pour the mixture into the tin. Bake for 40 minutes. Allow to cool thoroughly before serving with a dollop of brandy cream.
