Ingredients:
90g loosely packed parsley + kale leaves, washed and dried thoroughly
2 tablespoons toasted walnuts
2 tablespoons freshly grated Parmesan (or nutritional yeast)
1/4 teaspoon minced garlic
1/2 teaspoon himalayan salt
60ml plus 1 tablespoon extra-virgin olive oil
Freshly ground black pepper to taste
Chuck all of the ingredients into a blender and pulse the mixture so that you end up with a textured consistency. Depending on you blender you may need to stop and mix in the items to ensure an even blend.
