Keto Pancake Recipe:
dry ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/4 tsp salt
wet ingredients
- 4 large eggs
- 1/3 cup almond milk
- 1 tbsp melted coconut oil
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1 tbs coconut oil to coat skillet
Mix the dry ingredients together ensuring there are no lumps. Mix the wet ingredients and then add to the dry ingredients. Stir until well combined. If the mixture seems too thick, add a little more almond milk.
I always like testing a little of the mixture for the right consistency in the frying pan. If you're happy with the thickness of your pancake, then use a soup ladle to portion out the pancake mix. Once the pancakes have bubbled up, flip them over to brown the other side. It's worth being patient in the flipping process.
