Ingredients:
2 cucumbers, spiralised
1 carrot, julienned
1 cup cilantro leaves
1 green onion, sliced
1/2 red chilli
Dressing
3 tbs Nutcessity almond butter
1 tbs ginger
1 lime, zested and juiced
2 tbs virgin sesame oil
4 tbs tamari
1 tbs sesame seeds
Spiralise the cucumber, julienne the carrots (or use a peeler to make long, thin strips). Place the cucumber onto a paper towel, cover with another paper towel and press dry, then place into a bowl. Prep the cilantro, green onion and red chilli for the garnish and set aside. Place all the dressing ingredients into a blender, blitz until smooth. Pour the dressing onto the veg when you're ready to serve. Mix well. Garnish with the cilantro, green onions, chilli and sesame seeds.
